How the days unfold
Days here ask very little of you. A boat in the morning, a long table at lunch, the sea before anyone else is up — take what you want of it, leave the rest.

On the water · Half day
Coves Only the Boat Knows
You leave before the day has warmed, while the sea is still flat and the light comes in low and gold across it. A wooden boat, varnished and salt-worn, takes you out from the cove and along the coast — past headlands of grey stone and pine, into water that turns from green to deep blue as the bottom drops away. The engine cuts. There is only the slap of the hull, the smell of diesel and salt, and the cliffs rising behind you.
These are the coves you cannot walk to: a crescent of pale shingle under a wall of rock, the water so clear you can count the stones four metres down. You swim off the side into a cold that wakes every inch of you, then turn onto your back and watch the cliffs lean overhead. There is fruit and cold water on board, coffee from a flask, a towel warm from the sun. By the time you point the bow for home the day has properly begun, and you have all of it still ahead of you, skin tight with salt.

The Long Lunch
A table on the terrace, claimed for the afternoon. Lunch begins when the light is high and the cove glitters below, and it ends whenever you decide it should — somewhere between the last of the wine and the first cool turn of shade. In between, the kitchen sends plate after plate: anchovies under good oil, a pasta turned through with the morning’s herbs, fish that was in the water at dawn, tomatoes that taste of the heat they grew in.
The house chooses the wines, all of them from this coast and the hills behind it — a pale Vermentino with salt on the finish, a Pigato that carries the garden, something red and unhurried for the cheese. Glasses arrive with a few words about where each one comes from, then leave you to the slow work of the table: bread torn, plates passed, the sea moving below. There is nowhere else to be.

On the water · 1 hour
Sunrise Swim & Coffee
There is an hour, just after first light, when the cove belongs to no one. The sea lies flat and pale, the colour of the inside of a shell, and the only sound is water working against the rocks below. We’ll wake you with a quiet knock, hand you a towel still warm from the line, and walk you down through the olives while the village above sleeps on. The first swim is the cold, clean kind that finds every nerve at once — salt on your lips, the headland turning gold as the sun reaches it. Afterwards, coffee on the rocks, and the day still entirely ahead of you.

Market & the Kitchen
It begins early, while the village is still cool and the shopkeepers are folding back their shutters. You walk down with the chef to the morning market, past crates of tomatoes still warm from the truck, basil sold by the armful, anchovies bright as coins on crushed ice. This is where the day’s menu is decided — not on paper, but by what the fishmonger landed at dawn and which peaches give a little under the thumb. You taste as you go, learn what the chef looks for, carry the bags back up the hill.
Then the kitchen, its doors open to the sea. You cook what you bought: pasta rolled by hand, a fish baked under salt and lemon leaves, oil pressed a few valleys over. Knife work, a glass of something cold and local, the easy talk of people making lunch together. You carry the plates out to the terrace and eat there, the afternoon long ahead of you, the recipes yours to take home.

Gardens · 2 hours
Among the Olives
Morning is the best time among the olive trees, before the heat settles and while the light still comes in low and silver through the leaves. Walk the grove with the person who tends it, up through terraces held by dry stone walls that have stood longer than anyone can say. You’ll learn how the citrus is pruned, why the lemons grow so heavy here, which herbs come up wild between the roots, and how an olive becomes oil. There’s a particular quiet to this part of the property — birdsong, the dry rustle of leaves, the sea somewhere below.
It ends in the shade, with a tasting. Three of our oils poured over warm bread, each with its own character: one grassy and sharp, one rounder and softer, one that builds to a slow pepper at the back of the throat. A cold glass to finish, and the easy sense that you understand a little more about where you are.

By the pool · Half day
Long Afternoons by the Pool
The pool terrace sits a little above the cove, edged in pale stone that holds the morning’s warmth long after you’ve claimed your lounger. Olive trees throw a shade that shifts through the afternoon; the water is still and clear, and below it the sea keeps up its low, steady sound. There is no schedule here. A book opens and stays open. The hours go slack.
When you’re ready, our therapist comes to you — a massage in the shade of the citrus, oils pressed from local herbs, salt rinsed from your skin. Afterwards, a cold towel and a glass of chilled vermentino, the light turning gold across the stone as the day eases towards evening.
